The aromatic components of fresh and rotten Penacus orientalis were extracted by HS-SPME and identified by GC-MS. Then 100 μm PDMS microextraction fibers were used for sample pretreatment, with result that fresh prawn meat had 34 kinds of flavor composition, while rotten prawn meat had 48 kinds and quantified them.
